Metropolitan Recipes

Fig carpaccio with Iberian ham, parmesan flakes, arugula and pistachio vinaigrette.

How to prepare:

1 Wash the figs and cut them into not very thin slices.
2 Place the plates on a plate in concentric circles and slices of Iberian ham on top.
3 Dress the preparation with the pistachio vinaigrette.
4 Finish the plate with a good handful of arugula that volume and parmesan flakes (cut with a peeler).
5 Vinaigrette: mix in a bowl extra virgin olive oil, crushed green pistachios and apple cider vinegar.

Ingredients for 4 people:

    • 16u. Fresh figs
    • 200gr Iberian ham
    • 50gr of Parmesan (wedge)
    • 50cl extra virgin olive oil
    • 15cl apple cider vinegar
    • 30gr green pistachios

Baked mackerel on pumpkin and fennel with fine herbs

How to prepare:

1 Marinate the mackerel fillets for 15 minutes in the lemon juice. Remove and dry on paper towels. Reserve.
2 We preheat the oven to 180ºC.
3 Cut the pumpkin into cubes of 2 x 2, place in a baking dish and cook for 15 min. After this time, add the fennel cut to julienne and cook 10 for more minutes.
4 Chop basil, thyme and parsley separately. Mix the herbs, oil and salt to taste in a bowl.
5 Place the marinated mackerel fillets (skin side down) on the precooked pumpkin and fennel and water the preparation with the bowl content.
6 Bake the whole set for 10 more minutes.

Ingredients for 4 people:

4 fresh mackerel filleted
150cl lemon juice
25gr fresh basil
25gr fresh thyme
25gr fresh parsley
400gr pumpkin
1 fresh fennel bulb

Banana and oatmeal pancakes with vanilla and dark chocolate.

How to prepare:

1 Put all ingredients in the same container except chocolate and crush.
2 In a previously heated pan put four tablespoons of the mixture and brown on both sides.
3 Melt the dark chocolate and bathe the pancakes to taste.

Recipe for 4 people:

· 4 eggs
130gr ground oats
2 teaspoons vanilla extract
150gr dark chocolate
